본 연구는 우리의 전통 떡 가운데 하나로 최근 들어 남녀노소가 즐겨 찾는 간편한 일상식으로 자리를 잡고 있는 ‘증편’의 역사적 발달과 특징에 대한 정확한 이해를 토대로, 방언지리학의 관점에서 ‘증편’에 대한 지역적 변이형들의 지리적 분포를 파악하는 데 관심을 두었다. 연구 결과를 몇 가지로 요약하여 제시하면 다음과 같다. 첫째, ‘멥쌀을 술로 발효한 후 찐 것’이라는 의미의 전통적인 ‘이병류(酏餠類)’에 속하는 떡인 ‘증편’ 또는 ‘술떡’은 일찍이 삼국 시대 전기부터 전형적인 여름 떡으로 자리를 잡아 왔으며, 밀가루를 발효시켜 만든 것으로, 만두에 가까운 떡이라고 할 수 있는 고려 시대 이후의 ‘쌍화’ 혹은 ‘상화’와는 분명하게 구별되는 것이다. 둘째, 조선 시대 및 근대 시기의 전통적인 조리서들에서 나타난 ‘증편’에 대한 기술에 비추어 볼 때, ‘증편’의 종류는 크게 두 가지, 곧 ‘증편’계와 ‘방울 증편’계로 나눌 수 있으며, 후자의 경우 크기와 모양, 조리법에서 ‘증편’계와 상당한 차이를 보인다. 셋째, ‘증편’의 비표준 변이형들 또한 ‘증편’의 종류와 밀접한 관련이 있는 바, ‘증편’계와 ‘방울증편’계 두 가지로 나뉜다. 넷째, ‘증편’의 비표준 변이형들은 역사적 기원형으로부터 지역에 따라 달리 수행된 음성 변화 혹은 형태 변화를 바탕으로 형성된 것들로서 그 유형에 따라 ‘기주떡형, 기지떡형, 기증떡형, 기정떡형, 기타형’ 등 크게 다섯 가지로 구분된다.
Based on an accurate understanding of the historical development and characteristics of Jeungpyeon, which has recently become a favorite simple daily meal for men and women of all ages, this study focused on grasping the geographical distribution of regional variations of Jeungpyeon from the perspective of dialect geography. A few summary of the research results are as follows. First, Jeungpyeon or Sultteok, a traditional rice cake belonging to Lee Byeong-ryu, meaning fermented buckwheat with alcohol, has been established as a typical summer rice cake since the early Three Kingdoms Period, and is clearly distinguished from Ssanghwa or Sanghwa after the Goryeo Dynasty, which can be said to be dumplings. Second, in light of the description of ‘Jeungpyeon’ in traditional recipes of the Joseon Dynasty and the modern period, the types of ‘Jeungpyeon’ can be largely divided into two types, the ‘Jeungpyeon’ system and the ‘drop- Jeungpyeon’ system, and the latter is significantly different from the ‘Jeeungpyeon’ system. Third, the non-standard variations of ‘Jeungpyeon’ are also closely related to the type of ‘Jeungpyeon’, and are divided into two types: ‘‘Jeungpyeon’ and ‘drop Jeungpyeon’ increase’. Fourth, non-standard variants of Jeungpyeon are formed based on changes in voice or form performed according to regions from historical origin.
