Determination of mango fruit maturity is the main factor in mango fruit quality. Mango ripeness is still identified based on direct vision (visual). However, the weakness of visual vision is the way the operator sorts which is subjective so that it is less consistent in the classification process. This study aims to calculate the maturity level of mangoes using the Fuzzy C-Means classification method. The image sample uses the image of mango skin. Through the image of the mango skin, feature extraction is carried out to get the RGB value. The RGB values are then used to get the HSI and YCbCr values using the color space transformation. Classification of Golek Mango fruit maturity levels into 3 levels, ripe, half ripe, and unripe, using Fuzzy C-Means with HSI and YCbCr parameters obtained using feature extraction. The accuracy results of the classification of mango fruit maturity level with Fuzzy C-Means obtained an accuracy of 88.33%.
