使用高效液相色谱仪检测 4种裂叶五指毛桃果实中氨基酸含量,分析比较其氨基酸种类的组成成分,并对其营养价值进行评价.结果表明,4 种裂叶五指毛桃果实中均含有被检测的 17 种氨基酸,三裂叶五指毛桃果实中氨基酸总量最高,为 122.80 mg/g,而全缘叶五指毛桃果实中氨基酸总量最低,仅为 83.27 mg/g,必需氨基酸占总氨基酸的 38.94%?42.77%,精氨酸、亮氨酸和谷氨酸为含量最高的三种氨基酸.五指毛桃果实中芳香类氨基酸、甜味氨基酸及鲜味氨基酸含量丰富,平均含量分别为9.75、14.21 和 26.55 mg/g;药用氨基酸含量占总氨基酸比例的 51.92%?57.90%;氨基酸比值系数(RC)均接近 1,氨基酸比值系数分(SRC)介于 88.64?96.02 之间,4 种裂叶五指毛桃果实品质均较好.综上所述,五指毛桃果实中氨基酸含量丰富,是高药用价值的植物蛋白来源.该结果为五指毛桃果实营养价值评价、品种选育及保健食品的开发提供理论指导.
High performance liquid chromatograph(HPLC)was used in determination of amino acid content of fruits of four types of Ficus hirta with lobed leaf,and the fruits amino acid components were analyzed and compared,and the fruits nutritional values were evaluated.The results showed that there were 17 kinds of amino acids in all the fruits of four types of Ficus hirta with lobed leaf.The total amino acids in the fruits of three-lobed Ficus hirta was the highest,up to 122.80 mg/g,while the total amino acids in the fruit of Ficus hirta with whole margin leaf was the lowest,only 83.27 mg/g,and the essential amino acids accounted for 38.94%~42.77%of the total amino acids.Arginine,leucine and glutamic acid were the three most abundant amino acids.The contents of aromatic amino acids,sweet amino acids and umami amino acids in the fruits of Ficus hirta with lobed leaf were abundant,and the average contents were 9.75,14.21 and 26.55 mg/g,respectively.The content of medicinal amino acids accounted for 51.92%~57.90%of the total amino acids.The amino acid ratio coefficient(RC)was close to 1,and the amino acid ratio coefficient(SRC)was between 88.64 and 96.02.The quality of fruits of four types Ficus hirta with lobed leaf were good.In conclusion,fruits of Ficus hirta with lobed leaf were rich in amino acids and was a plant-based protein resource with high medical value.The research provides theoretical guidance for the nutritional value evaluation of fruit of Ficus hirta with lobed leaf,its varieties and potential in health food development.
