Vegetable washing machines are widely used in commercial kitchens and enterprises providing catering services to clean large amounts of (about 6 to 15 kg) various vegetables, fruits and frozen foods in one go by washing them with high pressure water. Customers are increasing their demands for effective disinfection as well as cleaning of various vegetables washed in vegetable washing machines. In this study, activities were carried out to wash various vegetables (parsley, lettuce, cucumber, tomato) and to obtain an innovative prototype with scientific data that provides effective disinfection according to different ozone amount and ozone application times by using the disinfection feature of ozone, unlike our existing products. With the original design and prototype manufacturing of the vegetable washing machine prototype that provides ozone-assisted disinfection with studies based on R&D systematics in the commercial kitchen area, unlike our existing products, the ozone amount and application time can be controlled according to the vegetable type, and a commercialized prototype has been developed.
