대구·경북의 식중독을 분석하여 식중독 사고의 차단, 확산 방지 그리고 예방대책 수립을 위한 기초자료를 제공하고자 시행되었으며 연구대상은 최근 4개년(2018∼2021년) 식중독 발생보고자료(1,058건/23,273명)의 자료를 분석하였다.대구·경북에서 캠필로박터제주니, 병원성대장균, 살모넬라 등으로 인한 식중독의 발생이 많았는데 완전히 익히지 않은 음식의 공급을 통한 세균의 증식에 주의해야 하고 조리 및 취식 시 위생을 철저히 해야한다.학교, 그 외의 집단급식소에서 대량 취식 인원으로 인한 식중독 환자수가 많이 발생할 수 있으므로 정해진 식품의 세척·조리공정을 잘 지켜서 교차오염을 방지해야 하며 코로나19 이후 중단되거나 축소되었던 급식이 재개되고 외식소비도 다시 활기를 띄면서 위생에 대한 긴장이 느슨해졌기 때문에 정보의 제공이나 교육 음식점 위생등급제, 학교급식 등에서 HACCP모델의 발전, 을 통해 느슨해진 위생에 주의를 기해서 식중독 발생을 사전에 차단해야 할 것을 시사한다.또한 대구·경북의 식중독 특이점을 심층적으로 파악하고 약점을 보완하는 방안을 마련하기 위한 지속적 모니터링이 필요하며, 개인위생의 관리와 식품안전관리는 물론 홍보와 실질적인 식중독 환자 저감을 위한 초기대응, 조사, 검사, 결과, 보고, 사후관리 등의 세부방안의 개선이 꼭 필요할 것으로 보여진다.
This study was conducted to analyze food poisoning in Daegu and Gyeongbuk to provide basic data for preventing food poisoning accidents, preventing their spread, and establishing preventive measures. As for research subjects, I analyzed the data of food poisoning occurrence reports (1,058 cases / 23,273 persons) for the last 4 years (2018∼2021).Food poisoning caused by Campylobacter jejuni, Pathogenic Escherichia coli, Salmonella, etc. occurred frequently in Daegu and Gyeongbuk. Hence, care must be taken to prevent the proliferation of bacteria through the supply of uncooked food, and hygiene must be thoroughly maintained during cooking and eating.Since a large number of food poisoning patients may occur in schools and other group food service centers, cross-contamination must be prevented by following the designated food washing and cooking process. As food service, which had been suspended or reduced after COVID-19, resumed and restaurant consumption was restored, tensions on hygiene eased. This suggests that food poisoning should be prevented in advance by paying attention to loose hygiene through the provision of information or education, the restaurant hygiene grade system, and the development of the HACCP model in school meals.In addition, it is necessary to continuously monitor to find out the peculiarities of food poisoning in Daegu and Gyeongbuk in depth and to come up with ways to supplement the weaknesses. It also seems necessary to improve detailed plans such as personal hygiene management and food safety management as well as publicity and initial response, investigation, inspection, result, report, and follow-up management for actual reduction of food poisoning patients.
