The foreign students capacity in South Korea domestic universities has gradually increased with the relevant globalization of education recently. In particular, this number is expanding due to the increasing demand for higher education in Asian countries such as China and Mongolia along with the spread of the Korean fashion trend, as well as the efforts from government and universities. Among them, the number of Chinese students studying abroad is augmenting. Since it’s necessary to manage foreign students in Korea, the first step shoud be figured out how well foreign students are adapting to Korean culture and university life. Most international students face serious difficulties in language problems, tuition fees, social problems, yearning for the motherland, personal conflicts, and even difficulties in daily work and adjustment. Under this background, the first life-related factor is adapting to the Korean diet. Since Chinese students have been accustomed to homeland delicacy for a long time, so it is difficult for them to adapt to Korean food in the short term. Therefore, such inadaptation will not only cause maladjustment to the Korean society and culture, but also lead to various dietary problems. The objective of this study is to understand the dietary status of Chinese overseas students in Gwangju and the influence of dietary life on their lives after analyzing the factors related to their dietary life and cultural adaptation, especially a gender survey has been conducted on their dietary life, so as to evaluate the nutritional status according to the food intake level. After being approved by the Bioethics Committee of Chonnam University (IRB No.1040198-201223-HR-147-02),the survey was conducted from February 9th 2021 to April 30th 2021. The self-filled questionnaire was used to recruit Chinese students living in Gwangju. Besides, the recruitment documents of this research object have been approved by the principals in several local colleges and universities, then the results have been reported literarily. A total of 500 questionnaires were randomly distributed, of which 468 were used for statistical analysis except for missing or inadequate answers. Meanwhile the content of the questionnaire was the same, which was divided into Korean and Chinese, and it was supplemented after preliminary survey. The questionnaire was conducted through an online mobile (chat group WeChat and QR code) to comply with social distance-keeping caused by the COVID-19 outbreak. Study participants were fully briefed by the investigator and decided to participate in the study on a voluntary basis. In addition, the questionnaire was consisted of 70 questions on general characteristics, healthy eating and living practices, and cultural adaptation. According to the survey, the general characteristics of the respondents were determined by living conditions, mainly including dormitory and self-living/self-living options. 71.6% of them thought that they came to South Korea for the purpose of obtaining a degree. In terms of alcohol and smoking, the results showed that 52.4% did not drink and Non-smoking accounted for 80.1%. From the computer and mobile phone responses, more than half of the Chinese students used the computer and mobile phone for more than four hours. Regarding the response distribution of meals per day, three meals per day was accounted for 45.3%. Furthermore, male intake was higher than female in dumplings, smoked meat, processed meat, seaweed and sandwiches based on the frequency of eating convenience food in different genders. Meanwhile, groups with high cultural fitness received a higher frequency of convenience food intake after having the relevant acculturation. Then the analysis of nutritional indices by gender showed that men chose healthy food more often than women. It's concluded that the majority of Chinese students who visit South Korea for the purpose of obtaining a degree need to make adaptation efforts to solve dietary problems and change their social environment in order to achieve a healthy and safe study abroad life. Therefore, we need to develop programs to alleviate homesickness and improve eating and living habits especially from the perspective of the problems evaluated in this study, such as convenient food intake and irregular diet..
