연제품은 어육에 일정한 양의 소금 및 기타 부재료 등을 혼합하고 분쇄 후 성형하여 만든 겔(gel) 상태의 가공제품이다. 소비자들의 웰빙(well-being) 식품에 대한 요구가 증대됨에 따라 영양가가 높으면서도 조리하기가 간편한 연제품에 대한 관심이 증가하고 있으며, 이와 관련된 제품의 생산과 매출이 해마다 늘어나고 있는 추세이다. 연육(surimi)은 생선으로부터 어육단백질만 회수하여 냉동변성방지제를 혼합하여 제조한 수산가공 중간소재이다. 본 연구에서 지방질이 상대적으로 적고 단백질함량이 높은 양식산 참돔으로부터 전통수세법을 이용하여 연육을 제조하였다. 연육의 어육 겔 특성을 측정하여 시판 명태 FA급 및 RA급 연육과 비교를 통하여 참돔이 시판 명태연육의 대체 원료로서의 가능성을 검토하였다. 그 결과 참돔으로부터 제조된 연육의 강도는 시판 명태 연육 FA급보다 낮았으나 RA급과 유의적인 차이를 나타내지 않았다. 연육의 색도의 경우 시판 명태연육 FA급보다 낮았으나 RA급보다 훨씬 높았다. 연육을 가열하여 제조된 어육 겔의 특성 비교 시 참돔 어육 겔의 강도, 파괴력, 탄력성, 응집성이 명태 FA급과 유의적 차이가 없이 높게 나타났다. 경도, 씹힘성, 깨짐성의 경우 시판 명태연육 FA급보다 높게 나타났으며 참돔 어육 겔이 탄력이 좋고 단단한 물성을 가지고 있는 것을 확인할 수 있었다. SDS-PAGE 패턴에서 같은 경향을 확인할 수 있었다. 백색도의 경우 참돔 어육 겔이 명태 FA급보다 약간 낮은 것을 확인하였다. 따라서 양식산 참돔으로부터 전통수세법을 이용하여 제조된 연육은 연제품의 대체 원료의 안정석인 수급과 가격의 안정화로 수입대체 효과 및 고부가가치 식품으로 이용이 가능하여 수산가공식품의 발전에 기여할 것으로 사료된다.
Fish-meat gels are one of the mainly desired surimi-based products that is mixed with salt and other supplementary materials and heated by various heating methods. Surimi is a Japanese word to define the washed and minced deboned fish meat with some preservatives such as sorbitol, sucrose and polyphosphates. In this study, the surimi was prepared from cultured Pagrus major in South Korea and it was investigated as a new raw material. P. major fish-meats were prepared by conventional washing process, and added cryoprotectives such as sorbitol, sucrose and polyphosphates. Washed meats were minced with 2.0% salt and the final moisture content was adjusted to 80% by adding ice water. The prepared fish-meat sol was extruded into a polyvinylidene chloride casing, then heated at 90°C for 20 minutes. After heating, the fish-meat gels were immediately cooled in ice water (about 0-4°C) for 20 minutes and refrigerated overnight at about 4°C until use. Its gel-forming property was assessed by measuring gel strength, texture profile analysis, Hunter color scale values and SDS-PAGE protein patterns. Gelling property of the washed surirmi prepared from cultured P. major were compared with that of Alaska Pollack surimi. The fish-meat gels from cultured fishes showed the higher gel strength rather than that from RA grade Alaska Pollack surimi. and similar properties to FA Alaska Pollock. Therefore, the washed surirmi prepared from cultured P. major could be an efficient and sustainable fish-meat source for fish-meat gel production in Korea.
