Persistent decline of rice consumption in Korea has heightened public awareness of future changes in the staple crop’s demand. By identifying age, period, and cohort effects, this study provides scientific reasons behind the weakening rice consumption and predicts its levels up to 2022. We found the age effects range from -5.8kg to 9.9kg across age groups. The period effects are changed from 21kg to -23kg over the 1982-2007 periods. The cohort effects vary from 20kg for those born in the 1940s to -33kg for those born in the early 1990s. Finally, rice consumption per capita by age group in 2022 is forecast to extend from 22.4kg for those in their 30s to 74.8kg for those in their 60s and beyond.
