For investigating moisture content variation law of thin layer carrots during hot-air drying, In this paper, the dynamic modeling and drying characteristics were studied, two models were used in the experimental data, the effects of air temperature, air-flow rate and sample thickness on drying kinetics of carrot slices were investigated, and the moisture effective diffusion coefficients were calculated by the Fick's diffusion model. Results showed that dynamic modeling of thin layer carrots can be described by Page model, the coefficients of equation were obtained through regression analysis, and the D eff with air temperature, air-flow rate and sample thickness equation was obtained by multiple linear regression, the D eff value increased from 0.84×10 −9 to 6.69×10 −9 m 2 /s as drying temperature, air-flow rate and sample thickness increased.
