본 연구는 반려동물사료 시장의 70%를 차지하고 있는 수입산 사료를 대체하고 노령견의 건강 유지 및 증진을 위한 국내산 발효사료를 개발하기 위하여 수행하였다. 발효균주는 식품에 널리 이용되는 Bacillus subtilis(B.s), Lactobacillus acidophilus(L.a), Lactobacillus fermentum(L.f), Pediococcus acidilactici(P.a), Pediococcus pentosaceus(P.p), Lactobacillus alimentarius(L.al), Lactobacillus brevis(L.b), Lactobacillus plantarum(L.p), Lactobaillus reuteri(L.r), Lactobacillus sakei(L.s) 및 Tetragenococcus halophilus(T.h)와 같은 11가지 균주를 선정하여 옥수수, 쌀, 대두박, 미강, 타피오카, 밀, 핀토빈, 오리분, 어분, 양육골분, 계육분 및 난황분과 같은 12가지 원료에 접종하고 37℃에서 24시간 동안 단기발효 하였다. 발효된 원료의 pH 및 암모니아성 질소를 측정하여 발효정도를 판단하였다. 그 결과, 쌀과 밀에 L.b(ΔpH; -0.74 ~ 0.94)를 접종했을 때와 양육골분에 L.r(ΔNH3-N 농도; 4.290 g/L)을 접종했을 때 긍정적인 발효 효과가 나타났다. 그리고 원료 발효 실험 결과를 바탕으로 제조된 발효사료는 in vitro 건물 및 조단백질 소화율에서 비발효사료보다 소화율이 높았다(p
This study was conducted to develop a domestic dog food for senior dogs’ health through fermentation. A total of 11 species of starter culture such as Bacillus subtilis(B.s), Lactobacillus acidophilus(L.a), Lactobacillus fermentum(L.f), Pediococcus acidilactici(P.a), Pediococcus pentosaceus(P.p), Lactobacillus alimentarius(L.al), Lactobacillus brevis(L.b), Lactobacillus plantarum(L.p), Lactobaillus reuteri(L.r), Lactobacillus sakei(L.s), and Tetragenococcus halophilus(T.h) were selected considering various fermentation parameters on high-carbohydrate or high-protein ingredients. And twelve ingredients such as corn, rice, soybean meal, rice gruel, tapioca, wheat, pinto bean, duck meal, fish meal, bovine bone meal, chicken meal, and egg yolk mainly used for dog foods were fermented with the each or mixed strains. The fermentation efficiency of these ingredients was investigated by measuring pH and ammonia nitrogen. In consideration of economic efficiency, solid type fermentation with a moisture content of 50% was performed for short-term period at 37°C for 24 hours.
