以油莎豆为研究对象,采用固相微萃取-气相色谱-质谱联用法(SPME-GC-MS)测定其挥发物成分.通过优化前处理过程中萃取头类型、萃取温度、萃取时间,确定最佳萃取条件.利用质谱数据库对挥发物成分进行鉴定,并采用归一化法进行含量分析.结果表明:最佳萃取条件为采用DVB/CAR/PDMS萃取头、萃取温度110℃、萃取时间30 min,在此条件下,油莎豆中共检测出27种挥发物,其主要特征挥发物为醇类和醛类物质,其相对含量分别为32.30%和43.56%.
The volatile components of Cyperus esculentus were determined by solid phase microextraction-gas chromatography-mass spectrometry(SPME-GC-MS).The optimum extraction conditions were deter-mined by optimizing the extraction head type,extraction temperature and extraction time in the pre-treat-ment process.The components of volatile compounds were identified by mass spectrometry database,and their contents were analyzed by normalization method.The results showed that the optimal extraction con-ditions were DVB/CAR/PDMS extraction head,extraction temperature 110 ℃ and extraction time 30 min.Under these conditions,a total of 27 volatiles were detected in Cyperus esculentus.The main characteristic volatiles were alcohols and aldehydes,the relative contents of which were 32.30%and 43.56%,respectively.
