睡眠作为一项人体必需的生理活动,在人类健康中起着重要作用.但是随着现代生活节奏的加快和精神压力的增加,我国失眠的人数逐年升高.与治疗失眠的精神类化学药物相比,食品中具有改善睡眠功效的天然活性成分安全性较高,且不易出现耐药性和药物依赖性,同时也符合人们日常饮食需求.本文主要介绍具有改善睡眠功效的天然活性成分,如活性肽类、氨基酸类、皂苷类、黄酮类、益生元等,阐述其改善睡眠的效果及其作用机理,并进一步综述评价天然活性成改善睡眠效果的生物评价模型,以及其在食品中应用的研究进展,以期为这些天然活性成分的高值化利用及食品开发提供参考.
Sleep,as an essential physiological activity,plays an important role in human health.But with the rapid pace of modern life and the increase of mental pressure,the number of people with insomnia in China is increasing year by year.Compared with psychoactive chemicals used to treat insomnia,the natural active ingredients in food with the effect of improving sleep have higher safety,and are less prone to drug resistance and drug dependence,and also meet people's daily dietary needs.This paper mainly introduced natural active ingredients that could improve sleep,such as active peptides,amino acids,saponins,flavonoids,prebiotics and other novel ingredients,elaborated on their effects and mechanism of improving sleep,and further reviewed the biological models for evaluating natural active ingredients to improve sleep effects,as well as the research progress of the models application in food,in order to provide reference for high value utilization of these natural active ingredients and food development.
