皮蛋是中国的传统美食,深受人们喜爱,但在存放期间易受环境的影响从而使其品质下降.本文研究以玉米淀粉为主要基质制作的复合涂膜剂对皮蛋保鲜的影响,通过单因素实验探究纳米氧化锌添加量对成膜性能的影响,并验证保鲜效果.结果表明,玉米淀粉与甘油比例为 3∶1,六偏磷酸钠添加量为基质的 6%,纳米氧化锌添加量为基质的 6%时,涂膜材料可以有效降低皮蛋水分的散失率,抑制皮蛋干缩变硬,延缓pH值的降低,有效维持皮蛋的特有色泽.
Preserved egg is a traditional Chinese delicacy,which is loved by the general public,but its quality is easily degraded during storage by environmental influences.This paper investigated the effect of a composite coating agent made with corn starch as the main substrate on the freshness of preserved eggs,and investigated the effect of the addition of zinc oxide nanoparticles on the film-forming properties and verified the freshness effect through single-factor experiments.The results showed that when the ratio of corn starch to glycerol was 3∶1,the addition of sodium hexametaphosphate was 6%of the substrate,and the addition of nano zinc oxide was 6%of the substrate,the coating material could effectively reduce the rate of moisture dissipation of preserved egg,inhibit the drying and hardening of preserved egg,delay the decrease of pH value,and effectively maintain the unique color of preserved egg.
