The article investigates the continuous production of oligodextrans via controlled enzymatic hydrolysis of industrial grade dextran in an enzyme membrane reactor, endodextranase. The researchers assessed the effects of substrate and enzyme concentrations and residence time in the membrane reactor on oligodextran yields, dextrose equivalent and oligosaccharide content. Results also showed the oligodextran molecular weight distributions.
